Wanted to share one of my favourite meals to have, this is a really filling evening meal and you get plenty of your veggies included.
For the jacket potato I place in microwave for 5 minutes before transferring to the oven to finish cooking. I topped this with Sweet Chilli Philedelphia
I fried some pork steaks with mushrooms in some frylight.
Boiled some mixed veg.
Roasted some cherry tomatoes in the oven.
Delicious!

Spanish Omelette
Ingredients
4 eggs
1 large potato
Selection of vegetables (I used mushrooms, peppers and spring onions)
Garlic
Chives
1. Slice potatoes really thinly and add to frying pan on a low heat, crush garlic and place over potatoes.
2. Mix eggs together with a dash of milk and seasoning.
3. Add the rest of the sliced vegetables into the pan.
4. Fry all ingredients until potatoes are soft, then add the egg mixture.
5. Cook on a low heat until egg is cooked through. You may need to turn the omelette ovrer or brown top under a grill.
I added some sliced babybel cheese on the top of mine and served with a salad. This is also goo served with beans.
You can add whatever you like to the omelette, ham and bacon work well. You can also add a lot more potatoes to layer it to make a thicker omelette that would do for more than one meal. It is also nice to serve cold for dinner the next day.
This worked well for my blood sugars as well as being compatible with the Slimming World plan.

Ratatouille
Here is something I have been meaning to make for ages and I finally remembered to get all the ingredients in at once!
Ingredients
Tin of Chopped Tomatoes
1 Red Onion
1 Corgette (Zucchini)
1 Aubergine (Eggplant)
1 Red Pepper
1 Yellow Pepper
2 cloves of Garlic
Salt and pepper
Oregano
Basil
1. Chop the vegetables and crush garlic. Stirfry garlic with the vegetables for a couple of minutes.
2. Add the tin of chopped tomatoes, I also added half a tin of water.
3. Add herbs to taste.
4. Simmer until vegetables are soft.
I served mine with a chicken breast stuff with cream cheese, herbs and wrapped in ham with some broccoli. It is equally good on it's own with a sprinkle of cheese.

Pizza topped mushrooms
Ingredients
Portobello Mushroom
Chopped Tomatoes
Vegetables (I used spring onions and peppers)
Garlic
Oregano
Basil
Ham
Cheese
1. Place mushroom in oven n 180 for 15 minutes
2. Chopped vegetables of your choice and fry with garlic, add chopped tomatoes and herbs
3. Take mushrooms out of oven and place vegetable mix in the mushroom and top with ham and cheese.
4. Return to oven until cheese is melted.
I served mine with slimming world chips and salad.

Turkey Hoi Sin Noodles
I made this a few weeks back and honestly it's the best thing I have eaten for ages, then again I seem to say this about a lot of things! I have tried to include the amounts I used but usually with vegetables I don't weigh and also some seasonings I just add until it tastes good.
Ingredients
80g Medium Egg Noodles
100g Turkey steak cut into strips
Mushrooms
Peppers
Broccoli
Spring Onions
1-2 cloves of garlic
2 tablespoon of Hoi sin sauce
Soy Sauce
1. Cut the turkey breast into strips and begin to fry on a low heat. Chop up peppers, spring onions and peppers and add to the turkey with crushed garlic.
2. Cook broccoli in some boiling water.
3. Cook noodles according to packet instructions.
4. One turkey is cooked add soy sauce, noodles and broccoli ensuring the soy sauce coats all ingredients. Then add the hoi sin sauce and stir.

Rice Pudding made with coconut milk
I made this recipe after discovering Kara dairy free coconut milk was 400ml for a healthy extra A. I am still messing around with the amount of pudding rice used as I have found the rice too mushy. Rice pudding is one of my favourite desserts, this recipe makes plenty and you may not be able to eat it in one day.
This is also good for those counting calories, kara coconut milk is 27 kcal per 100ml pasteurised skimmed milk is 33 kcal
Ingredients
400ml Kara coconut milk
60g pudding rice
Teaspoon of sweetener
1. Preheat the oven to 150c
2. Add the rice to an ovenproof dish and pour the milk over. Add sweetner, you may need to add more according to your tastes.
3. Place in the oven for 2-3 hours or when rice is cooked.
This is great served with nutmeg, summer berries or with some jam. It is great served hot or cold, but my favourite way is hot and on it's own!

Chilli and rice with salad and Greek yoghurt
Ingredients
Mince beef or quorn mince
Onions
Peppers
Tin of chopped tomatoes
Tin of kidney beans
Chilli powder or fresh chilli
Salt and Pepper
1. Brown the mince
2. Add chopped onions and peppers
3. Add in kidney beans and chopped tomatoes
4. Add chilli as much as you like and simmer for 30 minutes.
5. Season to taste.
I serve chilli with rice and salad and some fat free Greek yoghurt as I am a whimp with spice.
My rice is half brown rice and half white rice.

Creamy Pasta Bake
So after getting all my data from my broken computer I realised that I had a lot of recipes and food pictures that I haven't blogged so here is the first it's a creamy pasta bake. As usual I don't tend to weigh anything unless it's synned or a healthy extra so I have no measurements.
Ingredients
Pasta
Chopped Tomatoes
Any veg of your choice
Italian Oxo Cube
Garlic
Chilli
Quark
Healthy Extra A of cheese
1. Boil pasta until aldente
2. Fry vegetables together with garlic and chilli, add chopped tomatoes, oxo cube and herbs and simmer.
3. Once this is done stir in some quark (if you don't like this then you can leave it out or use a healthy extra of philidelphia cheese)
4. Combine all ingredients together and place in an oven proof dish.
5. Place in the oven on about 160 for 20 minutes, adding grated cheese to the top for the last 5 minutes of cooking. It's is done when cheese is melted and pasta had a crunchy top.
6. Serve with a salad

Magic Pancakes
If you are on Slimming World you will be familiar with magic porridge which to be honest didn't really tickle my fancy, however, when I saw it being turned into pancakes I thought maybe these crazy people were a little less crazy and this was the plan all along for magic porridge.
Ingredients
30g porridge oats (your healthy extra B choice)
1 pot of mullerlight yoghurt (I used banana and custard)
2 eggs
Sweetener (as much as you need I only used 1/2 teaspoon)
1. Mix the yoghurt and porridge oats together and leave in the fridge overnight.
2. Whisk together the eggs and sweetener until light and fluffy and add them to the yoghurt and porridge mixture.
3. Heat some frylight in a pan and using a cookie cutter place a couple of tablespoons of the mixture inside the cookie cutter.
4. I did a couple at a time and whilst the others were cooking left them in the over on 50C
So this is how mine turned out topped with chocolate Philadelphia and slice bananas. The mixture will make 6-8 pancakes which is too much in one sitting but can be eaten throughout the day as snacks. I liked them with a bit of low fat margarine on.

Bean and Veggie Sausage Stew
I came up with this before work a couple of nights ago and it was so delicious, definitely something I will be making again. As always I tend to just chuck things in without measuring. I split what I made into two portions and took to work, this heats up well and lasts for a couple of days.

Balsamic and honey glazed ham
Ingredients
Ham joint
4 teaspoons of honey
1 teaspoon of balsamic vinegar

Joe's Burgers with blue cheese mushrooms, roasted peppers, broccoli and feta cheese
I had this meal a couple of weeks ago and fell in love with it.
2 Joe's Burgers
63g Feta Cheese (1 and 1/2 HEA)
2 Laughing Cow Deli Light Blue Cheese (1/2 HEA)
Mushrooms
Broccoli
Peppers
For the mushrooms I fried them in some fry light then added the two Laughing Cow Deli Light Blue Cheese and stirred until the cheese was melted.
I roasted the peppers in the oven.
