Ham and Egg Bake

This is a great recipe for a red or extra easy day.

Ingredients

Cooked Ham
Chopped Tomatoes
3 eggs
Balsamic Vinegar
Mixed Herbs



1. Spray an oven proof dish with some frylight and preheat oven to 180c.
2. Layer the ham at the bottom of the dish



3. Add chopped tomatoes I used around 1/2 a tin and a splash of balsamic vinegar 


4. Crack the eggs into the dish. I used 3 but you could use 2. Sprinkle with mixed herbs


5. Place in over until eggs are cooked. Mine were slightly overcooked for me, but everyone likes their eggs differently.

Smoked Salmon and Scrambled Eggs

When I went to Lincoln before Christmas I had a lovely meal in the restaurant and my starter was devilled eggs (scrambled) with smoked salmon and hollandaise sauce. It was so gorgeous that I had to make it myself, it wasn't as good obviously but it makes a nice change to have a 'posh' breakfast.

Ingredients
Eggs
Milk
Salt and pepper
Smoked Salmon
Hollandaise Sauce
Spring Onion

1. Whisk together eggs, milk and seasonings. Place in a pan and begin to scramble


2. Place smoked salmon the plate


3. Add scrambled egg, a teaspoon of hollandaise and sprinkle spring onion over the top.
