Beetroot rice

Ingredients

Rice
Vegetable stock cube
Peppers
Mushrooms
Garlic
Garlic
Pickled beetroot


Method

1. Cook rice in vegetable stock. I cook mine in a steamer.
2. Chop peppers, mushrooms and onions, stir fry with the garlic.
3. Add cooked rice and mix well. Add beetroot and some of the pickle juice.

You can add whatever vegetable you like.
